My Meatless Mondays - Passover

I am not going to post a recipe, this week.  I will share a little of our holiday.

Passover lasts 8 days.  The first two and the last two are holidays, a time to share with family and friends and to eat all the special food, we make.  For the sedorim (seders), we had my son and family over.  What fun that was, chatting, playing with the kids, participating in the sederorim.

I think, this is the hardest Jewish holiday to prepare for. That, unfortunately means, when it arrives, I am exhausted.  I was blessed to have the helps of the kids and they really let me take it easy, until I threw them out of the kitchen.

There was one cookie, I wanted to make and did not get to, and I hope I will make it during the week.  It is  a brown sugar meringue.  It intrigues me to make meringue cookies with brown sugar.  I have never eaten one and I am guessing, this will be a treat.

For dessert, we had brownies, blondies and chocolate chip cookies.  I wanted to make a cooling sherbert but never got to it.
